Physical Properties:Colorless or white tetragonal crystal granules, readily deliquescent, alkaline, insoluble in ethanol. The pH of a 1% aqueous solution is about 9. It loses part of the water of crystallization at about 45°C and becomes anhydrous after complete dehydration.
Uses:In the food industry, it is used as a buffering agent, chelating agent, yeast nutrient, emulsifying salt, and antioxidant synergist. It is also used in pharmaceuticals, fermentation, and bacterial culture, and as a raw material for producing potassium pyrophosphate.
