Stable in dry state, hydrolyzes in aqueous solution, stable pH range 3-5, poor heat resistance, decomposes at high temperature.
Uses:Aspartame is a non-carbohydrate artificial sweetener widely used in beverages, foods, candies, chewing gum, dairy products and other products as a sweetener. It is also used in pharmaceutical preparations and health products as a flavoring agent. Due to its low calorie and high sweetness, it is commonly used in low-calorie or sugar-free products.
