Relative density 1.2060 (25/4℃), melting point 18℃, boiling point 122℃ (2kPa), refractive index 1.4392 (20℃), pKa=3.85. Miscible with water, ethanol and glycerol; insoluble in chloroform, carbon disulfide and petroleum ether. Decomposes upon heating at normal pressure, and partially converts to lactide when concentrated to 50%. It is chiral and exists as L- and D- optical isomers. Rat oral LD50 is 3.73 g/kg.
Uses:Lactic acid is an important organic acid widely used in the food industry as an acidulant, preservative and pH regulator to improve food flavor and extend shelf life. In the pharmaceutical industry, it is used as a preservative, solubilizer and pharmaceutical excipient. It is also applied in daily chemical products, leather, textiles, tobacco and industrial chemical fields.
