Physical Properties:Dark red powder or deep red oily liquid, a carotenoid naturally occurring as a red coloring agent in tomatoes, pink grapefruit, and palm oil. Insoluble in water; soluble in chloroform, benzene, oils and other organic solvents. It contains multiple conjugated double bonds, is relatively unstable, and sensitive to light and oxygen. Melting point approximately 172-175°C. No vitamin A activity.
Uses:Acts as a potent antioxidant by quenching singlet oxygen and scavenging free radicals such as hydrogen peroxide; its singlet oxygen quenching rate constant is about 100 times that of vitamin E and twice that of β-carotene. Mainly used as a food colorant and nutritional fortifier, also applied in health supplements and cosmetics to help combat aging-related degenerative diseases.
