Physical Properties:Dark green powder or dark green liquid, odorless or with a slight ammonia odor. Freely soluble in water, slightly soluble in alcohol and chloroform, insoluble in oils and fats. The aqueous solution is clear and free of precipitate, slightly acidic (pH below 6.5), and precipitation occurs in the presence of calcium ions. It has better light resistance than chlorophyll and is heat-resistant.
Uses:As a natural green colorant, it is widely used in food coloring (green peas canned, fruit and vegetable juices, fruit pulp beverages, carbonated drinks, formulated liquor, ice cream, jelly, biscuits, candies, etc.), beverages, cosmetics, and pharmaceuticals. It is suitable for neutral or alkaline foods (pH 7-12).
