- 暗红色粉末、糊状或液体，略有特殊气味。色素在酸性条件下呈鲜红色，中性至碱性条件下呈红至紫色。耐热、耐光性不良，对蓝光最不稳定，对红色光稳定。其抽提液呈强酸性。耐金属离子（如Fe3+）性较差，可添加植酸等金属螯合剂或氯化物以提高其耐热、耐光性。任意混溶于水、乙醇、丙二醇等醇性有机溶剂，不溶于动植物油、氯仿、苯等亲油性有机溶剂。适用pH值在4以下。

Physical Properties:Dark red powder, paste or liquid with a slight characteristic odor. The pigment is bright red under acidic conditions and red to purple under neutral to alkaline conditions. Heat and light stability are poor; it is most unstable to blue light and stable to red light. The extract is strongly acidic. Tolerance to metal ions such as Fe3+ is poor; metal chelating agents such as phytic acid or chlorides can be added to improve heat and light resistance. Miscible with water, ethanol, propylene glycol and other alcoholic organic solvents; insoluble in animal/vegetable oils, chloroform, benzene and other lipophilic organic solvents. Suitable pH below 4.
Uses:Used as a food colorant (red to purple-red). In China, it can be used in hard candy and agar soft candy at dosages of 3-6 g/kg and 1.6-2.4 g/kg respectively; in jelly, jam, fruit juice and fruit wine generally at 0.1-0.5 g/kg; and in prepared wine, fruit juice drinks and candy according to production needs. Suitable for foods that do not require high-temperature heating at pH below 4, such as syrups, cold desserts, powdered drinks, fruit syrup, ice cream and jelly.
