- 高分子酸性多糖类。外观为白色至浅褐色粉末，未磨碎时为不同尺寸的无定形滴状物或不规则小片，浅至浅棕色。无臭或微臭，味温和。90%溶于水，溶于5倍水中可形成高粘度胶体，水溶液粘度大于阿拉伯胶但粘着性较小。具有缓冲性，在少量酸、碱存在下pH值无明显变化。

Appearance: white to light brown powder; unground gum occurs as amorphous drops of various sizes or irregular fragments, light to light brown. Odorless or slight odor, mild taste. 90% soluble in water; dissolves in 5 times its weight of water to form a highly viscous colloidal solution. The viscosity of aqueous solution is higher than that of gum arabic, but the adhesiveness is lower. Has buffering capacity; pH value shows no significant change in the presence of small amounts of acids or alkalis.
Uses:Mainly used as thickener, stabilizer, film-forming agent and emulsifier. Widely applied in beverages, dairy products, meat products, chocolate, jelly, cold drinks, ice cream, baked goods and soft candy. Can be used as a substitute for gum arabic.
