Insoluble in water, but swells in water to form a gel and can absorb about 100 times its own weight of water; insoluble in ethanol, but swells in 60% ethanol. The pH of a 1% aqueous suspension is 4.5-4.7, and the viscosity is about 3.3 Pa·s. Unstable above 85°C, decomposes upon heating with a decrease in viscosity.
Uses:Used as a thickener, stabilizer, emulsifier and moisturizing agent to prevent ice crystal formation in frozen foods and separation of fat and meat juice in sausages. In the food industry, it is used as a stabilizer for cheese sauces and French-style salad dressings, typically at levels below 0.8%. In the pharmaceutical industry, it is used to produce oral laxatives, as the gum swells in the body and is not digested. Industrially, it is also used as an adhesive, suspending agent and gelling agent.
