Physical Properties:White or light yellow powder, swells in cold water to form a viscous colloidal solution, insoluble in ethanol. pH of 1% aqueous solution is 4-5, relatively stable to pH changes. Heating causes temporary decrease in viscosity, which recovers when the temperature returns to the initial value. HLB value: 12.
Uses:Used as thickener, emulsifier, suspending agent, water-retention agent and film-forming agent. In the pharmaceutical industry, used as emulsifying stabilizer for cod liver oil, orange juice cod liver oil, mineral oil and fat-soluble vitamins, and as suspending stabilizer for insoluble particles (0.2%). In cosmetics, used in oil-water stable systems such as hair cream and facial cream (0.4-0.8%). In the food industry, used as emulsifying stabilizer for acidic oil-water systems such as French and Russian salad dressings and various condiment sauces.
