- 黄褐色粉末或褐色非粘性液体。粉末状易溶于水，具有酶特有的气味，无潮解结块现象；液体允许有少量凝聚物。在60℃以下较稳定，最适作用温度60-70℃；在70-90℃之间，随温度升高反应速度加快，但失活也加快，适用于最高达90℃的液化过程。pH6.0-7.0较为稳定，最适作用pH6.0，pH5.0以下失活较重。钙离子对酶活力稳定性有提高作用；没有钙离子，酶活力完全丧失。

Physical Properties:Yellowish-brown powder or brown non-viscous liquid. The powder is readily soluble in water, has the characteristic odor of enzymes, and shows no caking or deliquescence; the liquid may contain a small amount of coagulated matter. It is relatively stable below 60°C, with an optimum working temperature of 60-70°C. Between 70-90°C, the reaction rate increases with temperature, but inactivation also accelerates, making it suitable for liquefaction processes up to 90°C. It is relatively stable at pH 6.0-7.0, with an optimum pH of 6.0; inactivation is significant below pH 5.0. Calcium ions enhance the stability of enzyme activity; in the absence of calcium ions, enzyme activity is completely lost.
Uses:Enzyme preparation. It is used in the liquid-process industries of food fermentation such as maltose, beer, rice wine, glucose, alcohol, liquor, monosodium glutamate, and antibiotics, as well as in desizing processes for silk, rayon, chemical fibers, and textiles. Fungal alpha-amylase is also widely applied in the production of starch syrup, oligosaccharides, beer, baked goods, and flour-based products.
