Physical Properties:The solid product is a beige-yellow powder; the liquid product is a reddish-brown liquid, readily soluble in water. Optimum pH: 4.0–4.5; optimum temperature: 60°C. It is very stable at pH 3.0/40°C, pH 5.0/below 55°C, or pH 7.0/below 45°C. A 50% sucrose solution containing 1–2 g invertase is completely converted within 12–24 h at about 50°C. Activity is very weak below 8°C.
Uses:It catalyzes the hydrolysis of sucrose to glucose and fructose, and also hydrolyzes raffinose to melibiose and fructose. It is mainly used in the food industry for producing invert sugar syrup, preventing sucrose crystallization, and improving sweetness in confectionery and bakery products. It is also used in fermentation processes requiring glucose as a carbon source for antibiotics, organic acids, amino acids, vitamins, and in health product applications.
