Physical Properties:White fine crystalline powder, odorless and tasteless. Composed of free-flowing non-fibrous particles, it can be compressed by self-adhesion into tablets that disperse rapidly in water. Insoluble in water, dilute acids, dilute alkalis and most organic solvents; swells in water.
Uses:Used as an anticaking agent, emulsifier, binder, disintegrant, dispersant, texturizer, non-nutritive bulking agent, dietary fiber and emulsion stabilizer. It is applicable in high-fiber bread, low-calorie candies, biscuits, cakes and ice cream, improving emulsification, preventing ice crystal formation and enhancing mouthfeel.
