Physical Properties:White to light yellow powder, almost odorless and tasteless, hygroscopic. It is easily soluble in water forming a viscous colloidal solution, and insoluble in organic solvents such as ethanol, ether and chloroform. The aqueous solution is neutral with a pH of 6-8. It has thickening, film-forming, gelling and emulsifying-stabilizing properties, and can form insoluble alginate salts with metal ions such as calcium, aluminum, zinc and iron.
Uses:In the food industry, sodium alginate is used as a thickener, stabilizer, emulsifier, gelling agent, suspending agent and film-forming agent. It is widely applied in ice cream, beverages, noodle products, candy, jelly and other foods to improve taste, shape retention and texture. In the pharmaceutical field, it is used as a suspending agent, emulsifier, viscosity-increasing agent and microcapsule wall material.
