Stable under neutral or slightly alkaline conditions with an optimum pH of 7.0–8.5 and an optimum temperature of 37°C. Lyophilized powder remains active when stored at 2–8°C protected from light.
Uses:Asparaginase is an antitumor enzyme preparation mainly used in combination chemotherapy for acute lymphoblastic leukemia. In the food industry, it is also applied to reduce acrylamide content in bakery products.
