Uses:Inulinase specifically hydrolyzes β-2,1-fructosidic bonds in inulin, producing high-purity fructose syrup, fructo-oligosaccharides and fructose. It is widely used in the food industry for enzymatic conversion of inulin, as well as in biofuel and pharmaceutical industries for functional sugars production.
