Physical Properties:White to slightly yellow powder, translucent, horny texture with short cracks; odorless and tasteless, slimy to the touch, and becomes more friable when heated to 50°C. Readily soluble in water. It is a high-molecular-weight, highly branched polysaccharide consisting mainly of galactose and arabinose residues, along with small amounts of galacturonic acid groups.
Uses:Mainly used as a thickener, emulsifier, suspending agent, water-holding agent and film-forming agent. In food industry, it stabilizes acidic oil-in-water systems such as French/Russian salad dressings, sweet and sour sauces; in pharmaceuticals, it acts as an emulsifying stabilizer and suspending stabilizer for insoluble particles; in cosmetics, it is used in oil-water stable systems for hair creams and face creams. It can also be used as a soluble dietary fiber supplement to supplement cellulose.
