Physical Properties:Colorless to light yellow transparent viscous liquid, molecular weight 210.23, with a soft, long-lasting sweet vanilla aroma with creamy, chocolate, milky and powdery notes. Slightly soluble in water; readily soluble in ethanol, methanol, propylene glycol, glycerol and chloroform; soluble in hot vegetable oil, insoluble in cold vegetable oil. Resistant to alkali and high temperature, not easily oxidized or discolored; stable in neutral/weakly alkaline environments, easily hydrolyzed under acidic conditions to release vanillin; has good antioxidant and light resistance, and can be stored for a long time sealed away from light.
Uses:Mainly used as a food flavor for vanilla, cream, chocolate, cocoa, toffee and milk-coffee flavor bases, and can be added directly to ice cream, yogurt, candy, chocolate, baked goods, pudding and chewing gum. Used as a long-lasting fixative in daily chemical flavors such as perfume, shower gel, soap, scented candle and laundry detergent; also used in tobacco flavors, flavor corrective agent for oral liquids in pharmaceuticals, and as an intermediate in organic synthesis.
